One of the not-so-visited parts of Iceland is the Eastern coast. They have much better weather than the west coast and have absolutely stunning scenery. Most of the places require you to have a 4x4 though. You can spend 2-4 days in Eastern Iceland easily if not more.
Things to do in East Iceland
Here are some of the key attractions in East Iceland
About an hour from Diamond beach is Vestrahorn. This is where you feel like you are walking on water and its so cool. The mountain backdrop is so picturesque. They have an entry fee for this and it needs to be bought at the coffee shop at the entrance. They have some nice homemade desserts too.

Hengifoss, the tallest waterfall in Iceland is also here in east Iceland. You need to take a F road, so a 4x4 vehicle is required. The waterfalls are absolutely stunning. There are 2 waterfalls here and its a very pretty valley view

My favorite in East Iceland is Seydisfjordur. This little mountain town has the popular Iceland church with the rainbow road leading to it. All stores around have very cool graffiti and there is a very nice feel to this little town.

If you have time and love hiking, we highly recommend Storurd. The hike takes about 5 hours but is totally worth it. Towards the end, it gets pretty steep but the scenery is breathtaking the entire way. You also get to walk amongst mountain sheep here.
